Crock Pot Rib Roast Recipe – Lucky #FreshFinds

My family is one of those meat and potato loving families. When the weather starts to change, I love having comfort food. Knowing that the holidays are coming up and I’ll be filled with Turkey and Ham, I wanted to enjoy a nice comfort meal with the family. When I was doing my weekly shopping at Lucky Supermarket I spotted these amazing #FreshFinds Master Cut Beef Cross Rib Roasts. What’s great about these is they were already at an amazing price but then I spotted that from 11/13 to 11/26, Lucky will offer a buy one get one free sale on the following mix and match items:

  • Riverside or Honeysuckle White Frozen Turkeys

  • Cooks Ham Portions

  • Master Cut Beef Cross Rib Roasts

  • Pork Shoulder Roasts

  • Honeysuckle Turkey Breasts

Right when I saw these cross rib roasts, I immediately thought to myself, yum. Slow Cooker Rib Roast for dinner. We picked up a few extra ingredients: Carrots, Onion, Red Potatoes, and green beans for the side.

I have a recipe that my Mom shared with me for a Crock Pot Rib Roast Recipe. It’s incredibly amazing and super easy.

Quick Note: I seared the meat since I wanted the roast to cook a bit faster than the recommended 6 hours. I get a pan nice and hot, add a bit of oil, drizzle flour on the roast and sear each side for about a minute. I cooked this on high for 4 hours and it was perfect. You can skip the searing and cook on high for 6 hours for the same result. 

After I set this up for 4 hours on high, I made a few side dishes. Crunchy Potatoes and Quick Tossed Green Beans in olive oil and salt and pepper.

The crunchy potatoes go well with this since they soak up the yummy rib roast juices.

Recipe:
6 Red Potato
1/4 Cup of Olive Oil
1.5 Tablespoons of Minced Garlic
2 Tablespoons of Fresh Minced Parsley
Salt and Pepper

Coat the potato in the olive oil and seasonings. Bake at 400 for 40 minutes, toss twice while cooking to get the crunch on each side. Best Crunchy Potatoes Ever.

After the roast was done, take it out and cut against the grain. Add it to your plate with your side dishes and drizzle a bit of that yummy sauce it cooked in. Quite a tasty dish!

    I completely forgot to start my crock pot this a.m. Looks like I’ll be simmer-cooking my roast in the oven today. GRRRRR!!!!! Wish I had read this post about three hours ago. :)
